Russian Food History
Historically, the foods in Russia have been based on crops that grow in cooler climates including root vegetables, grains and cabbage. During the reign of Peter I, there was a French chef working for him. This is when the Russians started to serve meals with courses, rather than all at one time. From the rule of Peter I to the 1917 when the Russian Revolution started, it was common for high-standing Russian families to have a French chef.

Traditional Russian Foods
"Zavtrak", also called breakfast will often consist of coffee or tea and bread. It is also common to eat a type of porridge called Kasha. Obed is lunch and is the biggest daily meal. Much of the food in Russia is eaten at lunch time and a typical lunch has many courses. It will start with salad that might have poached fish and salted meats. The dressings are a lot like mayonnaise or sour cream. Dinner is called "uzhin", which is based on red meat or fish and has two sides.

  • Okroshka - This cold soup is made with a mixture of vegetables and also has eggs, beef or veal added.
  • Sel'd' Pod Shuboi - This is a layered salad made up of cut salted herring that is covered with boiled vegetables, mayonnaise and chopped onions.
  • Vinegret - This is a salad of boiled red beets and also has pickled cucumbers, boiled potatoes, carrots, onions and a dressing of vinaigrette that includes vinegar and sunflower oil.
  • Kotlety - This is a traditional food in Russia. They are small meatballs that are pan fried. They are made up of chicken, beef or pork.
  • Borscht - This is a red soup made up of beets, tomato juice, broth and vegetables.
  • Vatrushka - This pastry has cottage cheese in the middle and often has bits of fruit and raisins.
  • Pirozhki - These are little stuffed buns made of yeast bread or short pastry.
  • Pelmeni - This dish is dumplings are filled and wrapped in unleavened thin dough.
  • Kholodets - This is a common food in Russia. It consists of pieces of chopped pork in a jellied stock.
  • Ukha - This russian soup is clear and is made of root vegetables, parsley root, potato, leek, lime, bay leaf, green parsley, salmon, cloves, cinnamon and black pepper.

  • Kvass - This is a drink that is fermented and is made of rye bread. Often, it is fruit or herb flavored.
  • Vodka - This is a distilled drink that is most commonly found in Russia. Vodka is made from foods like potatoes and grain that are fermented. Common brands include Russian standart, Shustov and Stolichnaya.
  • Medovukha - This is a honey based alcoholic drink.
